A single jar represents thousands of flowers visited, tens of thousands of foraging flights, weeks of natural transformation inside the hive, and careful stewardship by a beekeeper managing a living ecosystem.
It depends entirely on weather, seasons, local forage, and the health of the colony. There are no shortcuts.
A Market Distorted by Cheap Imports
Ireland produces only a small proportion of the honey it consumes. The vast majority is imported — and while some of it is excellent, a significant portion of the global market has been affected by adulteration and mislabelling.
This has led to a situation where genuine producers are competing against diluted or misrepresented products, undermining trust and value.
