Rooted in Irish Tradition

Long before beer or spirits, mead was Ireland’s ceremonial drink — shared at marriages, alliances, and moments of transition. It was made slowly, served deliberately, and reserved for occasions that mattered.

 

Our work draws on this tradition with modern understanding, informed by collaboration with Teagasc’s National Brewing & Distilling Centre. This is tradition treated with respect, not theatre.

The Honey

Our core honey profile is a traditional Connacht-led blend of wildflower and heather honey.

Wildflower honey provides balance and softness, while heather honey adds aroma, structure, and Atlantic character. We do not standardise flavour across years. Variation is part of authenticity.

The Mead

Our meads are fermented slowly, finished cleanly, and allowed to mature naturally. They are clear, wine-like, and designed for sharing rather than spectacle.

Every batch is released when ready — not when convenient.
