ENNISKERRY, Co. Wicklow — Wild Atlantic Mead founder, beekeeper and conservationist Seán O’Connor is set to host a unique hands-on Mead Making Masterclass at Poppies Cafe in Enniskerry on Tuesday, 11 August 2026.

The event will offer just 20 guests the opportunity to discover the fascinating history of Ireland’s ancient honey wine while learning the 5,000-year-old craft of mead making and creating their own one-gallon batch to take home and mature.
“Enniskerry is just a short drive for people across South Dublin and Wicklow who are looking for a genuinely different night out,” explains O’Connor. “You come away not only having enjoyed the evening, but with a 5,000-year-old skill, your own mead-making equipment and a gallon of honey wine that you have made yourself.”
Long before Guinness or Irish whiskey became synonymous with Ireland, mead — a drink traditionally fermented from honey, water and yeast — held an important place in Irish culture. Associated with the Hill of Tara and the High Kings of Ireland, honey and beekeeping were also considered important enough to be governed by Ireland’s ancient Brehon Laws.
Now Enniskerry local Seán O’Connor, founder of Wild Atlantic Mead and the Native Irish Honey Bee Sanctuary, is bringing this ancient craft back into the community.
“Mead is part of Ireland’s liquid history, but it is also incredibly relevant to our future,” says O’Connor. “This masterclass isn’t just about making a drink. It’s about reconnecting people with the land, understanding the vital role our native honey bees play in the environment, and discovering the extraordinary variety of Irish honeys and the flavours they can bring to mead.”
The two-hour immersive workshop will take place in the heart of Enniskerry at Poppies Cafe, widely recognised for its commitment to sustainability.
Participants will get fully hands-on, learning the step-by-step process of making mead, from blending honey and water to testing, adding yeast and beginning fermentation.
No previous brewing or mead-making experience is required, and every participant will leave with their own batch of mead and the equipment needed to continue the fermentation and maturation process at home.
Each ticket includes:
• 4.5 litres — approximately one gallon — of traditional honey wine made during the masterclass to take home and mature.
• A complete glass demijohn and airlock setup.
• A tasting selection of premium Irish honeys.
• A souvenir Mead Making Masterclass apron.
• A take-home jar of premium Irish honey.
• Light refreshments served by Poppies Cafe during the evening.
The event also has a strong conservation purpose. A portion of every ticket sold will support the work of the Native Irish Honey Bee Sanctuary and its efforts to help protect and raise awareness of Ireland’s native honey bee, Apis mellifera mellifera.
Tickets are strictly limited to 20 participants to ensure a personal, hands-on experience and are expected to sell out.
